Restaurants I like:

Hugo's Cellar @ The Four Queens
Downtown isn't the same as the strip, but its a good change of pace. I always make sure I eat there every time I go. Its the same wait staff almost every time over a 20 year span.

Julien Serrano in the Aria. Tapas restaurant. Ate ( and stayed at the Aria ) there the last time I was in Vegas. Great meal.

The restaurant in the bottom of the 'Eiffel Tower' in Paris Casino, Mon Ami Gabi. Cool to sit outside and people watch on the strip.


Id try to make reservations ahead of time.

Hoover Dam, The Mob Museum, Pawn Stars Shop, Water show, just walk the strip during the day and it's beautiful. (Not to mention the crazy asses dressed up)

I second going to see Absinthe. Be sure to book seats in the back at a table. The venue is small so there isn't a bad seat in the house, but at a table you have more room, and they are the same price. We went a few weeks ago and the show was hilarious.

Not sure if its your thing, but check out Pro Gun Club. We went and shot fully automatic guns, grenade launchers, .50 sniper rifle, etc. Was an absolute blast. I dunno if your girl is into that, but not often you get an opportunity to do that. It's about 20 minute drive outside of Vegas. We had 6 of us and they gave us a ride there / back.

If neither of you care too much about being connected directly to a casino, i would highly recommend the Vdara Hotel and Spa at City Center. You're still near Aria, Cosmopolitan, and Mandarin, but you're in a stand-alone hotel. At the same rate of a normal room at a casino, you can get a bigger room or suite at Vdara. It's all class too.

...A different angle to consider.

Also, if you're budget-minded, consider staying at a less-popular place, like the Mirage or Monte Carlo. Again, you can get into a nice suite for the price of a normal room at one of the hot and trendy places like Mandarin or Cosmopolitan. For example, a basic City Room at Cosmopolitan is much more than a Monaco Suite or a Spa Suite at the Monte Carlo per night.

My favorite resort is Wynn/encore just cause it is a little out of the way. Get a three day bus pass for $20. If you aren't into gambling, vdara is really nice and sample free without a casino. It is also less expensive than the neighboring hotels, but is still a five star hotel. Also try the cut of the week at Charlie palmers in four seasons, 49$ for three course meal with unlimited wine pairings, at a celebrity steak house, make sure to check the menu before going because it changes every week. Also try absinthe and the $20 trick as stated before, and the mob museum
