Going to head to Vegas for a little get away toward the end of next month with the girlfriend. Should I stay at the Wynn or Venetian/Palazzo? Neither one of us is a big gambler so what are some can't miss things to do while there? Will be there 4 days
Also any tips or tricks on special deals to take advantage of?

Any of the big hotels on he main strip are good.
Plenty of deals to be had all the time. Just do the basic research.

They're both a bit up the strip, but I think Wynn is too far from everything else.

If you can afford to stay at the Wynn or Venetian/Palazzo, you can afford to stay at the Bellagio. The Bellagio is much more centrally located on the strip.
Or, you can stay across the street from Bellagio at Harrah's and save $500 or so, and use that to have a decadent meal somewhere.
Or Hooker.
Or Blow.
Or a cheap hooker and crack.
Your choice.

Just go straight here. That's where you'll end up anyway.

Thanks for the suggestions.
What about things to do and best restaurants?

Pretty much right next to each other. Take the best deal.

Wynn is the best property in vegas imo. It is so damn big when you include encore and has everything to entertain for a week. Encore beachis the best poolparty in vegas. Surrender, XS, and tryst are great. Least smoky casino in all of vegas and even an ok sportsbook.
Agree that bellagio is more centrally located, but its just a 7-8 buck quick cab ride between the two.
Personally I like planet Hollywood as well because it is about as centrally located as it gets and I like the party vibe there.

If this is your first trip go see a show, or just walk the strip.
As far as restaurants go, you have to decide your what your budget is.
There are too many options to list.

Every restaurant that can afford rent in one of the marque strip hotels is going to be superb. Thomas Keller has a place in the Venetian that is off the beaten path. And the Foundation Room at Mandalay has the best view in town, by far. Mon ami gabi at Paris is a great lunch to sit outside and people watch.
Regarding shows: pick out whichever cirque du soleil sounds most interesting.

Most overrated locale in the entire world.

I don't have a real feeling for you budget, but I am pretty damn tight and can give my perspective...
there used to be an airline called allegiant air that had a direct flight from Shreveport to vegas that was cheap as hell...may save you some bucks, if you don't mind driving a bit..
when you look at a map of the strip, it looks like things are a short walk apart...they are not...I typically like to stay at a property that has a train stop in it, as the train parallells the strip and is cheap and clean...
you can eat some damn good food in vegas, but the prices will shock you...I typically like to stay in or near some place with a food court, as you are not going to want to sit down to a $50 per plate meal that takes two hours three times a day...food court gives you some cheaper/faster options when you just need some food...
vegas is totally designed to drain your wallet (typically either gambling or eating)...every property has some kind of cool attraction to draw in customers and they are all free (pirate show at TI, fountains at the bellagio, etc.)...figure out what these attractions are and you can spend a half of each day viewing them and spending no money...

I stayed at the Venetian, problem is you'll spend less than 4 hours a day/night there. Go cheap on the hotel room and spend your money in places where it matters.
See the sights on the strip like the fountains a paris tower but spend your time on freemont st IMO. Better drinks, prices and fun on freemont street plus you can go ziplining down the street over everything. The main strip sucks imo

The Mob Museum downtown is pretty cool..I think it's $15-$20 per person to get in and it's a good way to kill about 4 hours. A lot of very interesting stuff in there. While you're downtown, go checkout the Mike Hammer Comedy Magic Show at the Four Queens. It's a hilarious show, and very reasonably priced. If you do end up going downtown, take The Deuce. It's a bus that runs all day/night, and a 24 hour pass is only $7. It'll take a little bit longer to get there as opposed to a cab, but you'll save a lot of money in the long run.
At The Mirage on the Strip, The Beatles: Love is a very good Cirque De Soleil show, the girlfriend will definitely love that one.
Clubbing wise, XS, Tryst, and Surrender inside of the Wynn are legit as frick. Also, Light at Mandalay Bay is a good one. I've heard a lot of people raving about Drai's inside The Cromwell as well.

any tips
When you're checking in, place a $20 in between your credit card and ID (that's what's commonly known as "a sandwich" ) and ask the clerk if there are any complimentary upgrades available. Sometimes it works, sometimes it doesn't.
If you're a smoker, load up on cigarettes before you get to Vegas. Cigarette prices out there are a bit steep.

special deals to take advantage of
Jack Colton usually offers special deals through their site, or can guide you in the right direction as to where to get them. There's also a list of reputable VIP hosts if you and your girl are into the bottle service thing.
Have fun
ETA: oh, and pics of girlfriend
