Ask about the new basketball arena...your kid is in engineering and what's to know the timeline on if he'll get to work on the project, or like WTF is the deal.

If plans are to live on campus, do the dorm tours to see the different types of bathroom layouts.
If you know which school your focusing on, do that school's tour later in the afternoon. When I and my daughter toured, there were only two other kids on the tour.
We had about 30 minutes of one-on-one conversation with the dean of the art department, Arne Flynn.
The Rec Center tour was badass.
The Ogden honors tour was meh.
Stop and get some ice cream with your kid at the Ag Center dairy store.
