1. Pound of HOT breakfast sausage (I use the cheapest, extra fat make them more moist)
2. 8 ounce pack of shredded cheddar cheese
3. About 1 cup of bisquick. Maybe a hair more. But no more than 1.5 cups.
4. Half a block of cream cheese (optional, but I think it makes them better).
5. 1 Diced jalapeno (optional)
Mix it all together well, roll into quarter sized balls. Bake for about 18-22 minutes at 350 if thaw. 20-25 if frozen.
The biggest key is to not use too much bisquick. Most recipes call for way too much and they come out bready and not moist.

That's what I forgot!
I do think jalapenos are mandatory but some folks have too much cracker in them.

Would go over fairly well for Thanksgiving, but they're really a good option for gatherings that require hors d'oeuvres. Very simple, tasty hand-foods.

YW. They are great for breakfast or football parties. I usually make them, roll em up, and put in a gallon ziplock and freeze. Then cook before serving. Best right out of the oven.
That recipe should make about 35-40 if you dont roll them too big. Quarter size or a bit smaller is best, imo.

It isn't traditional, but my mom used to make Spinach Madeline for every Thanksgiving and Christmas dinner.
Here's the recipe from River Road cookbook: Spinach Madeline
She used the Velveeta jalapeno instead of pepper jack though.

Grilled acorn squash
Cut in half and scoop out the seeds and stringy stuff like a pumpkin leaving just the “meat” of the squash.
Put a slab of butter in the hollowed out section of each half.
Salt and pepper liberally (Cavenders Greek seasoning is also good).
Wrap in foil folding ends up and on top to keep butter in.
Cook on medium-high heat for one hour always leaving hollowed out side up.
Unwrap carefully and serve entire half.

This sounds great - my children eat constantly so I will try this - maybe it will satiate their appetite for a few minutes

Jimmy dean, but I use the cheap stuff. Jimmy dean is too lean I think. Fattier works better.
