If the tankless water heater is installed in the same location as the tank heater, the time to draw HW at the faucet is the same.
The advantage is you don't heat water 24/7 and you don't run out.
Disadvantage is initial cost and more stringent ventilation requirements and the deal with power.

There are several different tank sizes, different tank shapes and ventilation requirements.

They are easy to install. But if you are switching one out, know that the old one will weigh a ton- you will need at least two people and a two wheeler to move it. I had my sons and their football teamates wrassle it out.
Wow.
Or you could just connect a water hose up to it, put it up to a slight angle, open the valve and let it drain itself.

I agree with you, but if you're going to do it yourself, you can use shark bite connections and its as easy as can be. Its not like you have to solder it.

There are very few things that are more simple than sweating copper. There are also several options these days that don't involve copper at all, much less sweating it.

Need just a regular gas water heater, standard size, etc. Are they specific for a house type or pretty much they are generic and fit all homes? Anyone recommend a brand and model? Also how much am I looking to spend on the heater and a plumber to install?
If you're going to hire a plumber anyway hire someone who can recommend a good unit and just buy it from them .
That way if anything goes wrong it's his problem to fix. Plus most places charge a higher labor rate if you supply your own parts and such anyway.

shark bites..... wouldn't do an attic water heater, however.

you don't need sharkbite. sweating isn't hard.

No, even a drained heater will still have deposits in it, wet metal dust sludge. Worse if you let rust through and leak before replacing. Which I have done twice.
