My buddy from LSU (and a seldom poster here) has an oyster farm out there.
They sell his oysters all over the US for like $3/each (Luke's in NOLA has them this week).
Head to Sassy Bass and you'll get a dozen for $20.
Like others said, if you're family is chill, you'll enjoy the private beaches. You will be able to see the rigs, but it ain't a big deal.
If you're coming from LA, head to Dauphin Island and take the ferry. IT'll cut like 45 min off your drive time, and the kids may see dolphins.
And, the fort is not mandatory. Especially in July.

Speaking of the Fort, never do their candlelight tour, ever. It isn't candlelight, it's hot, it isn't even a tour of the Fort and mosquitos the size of a truck will eat you. Coolest part of it was when they shot the cannon.
If you want to see the Fort just go visit it, don't worry about the tour.

Do you fish? If so, drive to the dead end at the fort and chunk some shrimp behind it. Reds, specks, etc. Also good fishing on gulf side from houses.

Hopefully you get a wind out of the east or south or north. A steady wind out of the west shoves all the brown Mobile Bay water over to Fort Morgan. Otherwise the watrr color is great. I go every year and we bring our dog on the beach. Very laid back place!!

I escape to Fort Morgan once a year
Play golf at Kiva and Penninsula
Fish with Nicole Charters and have a fricking blast
Grill steak and seafood - and drink
Hope that your in laws got a place with a pool
If so, you are set - get ready for BJs and reverse cowgirl sex from your woman while her family is at the beach

call the ferry before you get off I10. some days the wind is too high or there is a waiting line 2 miles long. if you take the mobile bay bridge, don't get off at exit 44. go a few miles farther and use the beach express. you can cut back to 59 at highway 8.

For relaxing Ft Morgan>>>> Gulf Shores. Water isn't too visible but the beaches are nice and they won't be crowded. Ft Morgan beaches are all about the company you bring with you to the beach. Gulf Shores beaches provide more entertainment and people watching. I like both but if it's relaxation you seek then Ft Morgan. Neither will provide the clear water you seek though. Also if you go to Ft Morgan make sure you bring beach games with you like Bochie Ball, horseshoes, polish horseshoes etc... you'll have plenty of room on the beach to play all of them.
