The beef is brisket and the pork is pork loins cooked, cooled then sliced thin. In 1935 my father was 12 and drove from New York City, where he lived with an Uncle to see his father who was working at Southeastern in Hammond. I had one the other day when driving to Amite and get maybe 2 a year. Only one I go to and it’s nostalgia more than anything but for $3.50 it’s not a bad BBQ sandwich and it reminds me of my old man. I’m ok with it not being Aaron Franklins brisket.

I don't doubt it was great way back when. My father was pretty nostalgic about it when we moved back to Louisiana in the early 90s. My grandparents supposedly were fans of it. We used to get them every so often when I was in high school.
However when I moved back to the area a little over 10 years ago, something was amiss. The taste was off, the sauce tasted bitter. The pork just seemed dry despite being smothered in sauce. The one in Hammond is marginally better than the one in Ponchatoula. Then they started offering them dressed and with cheese. As if they weren't messy enough.
They still wrap them in paper if you eat in. Why? Half the bun and sauce sticks to the paper. I don't remember it being that way.
See, that's a winning issue for those running for mayor. Forget the brown water, Make Hi-Ho Great Again.

Yeah you gotta sit down and eat them fast. They don’t travel well. I think they are just so hot the wax paper molds to it. If you tell them they will put it on a paper plate in Hammond. I’ve never gone to any other nor will I. I’ve never seen one that flat either. But I do remember them being $.50.

First, hi ho is a Hammond thing. And it’s not meant to be bbq, it’s a sandwich place that sells ll kinds of stuff. I’m a pork dressed with cheese, combination, and Barq’s dude.
Ms Celeste would roll over in her grave if you Ponchatoula river trash boys claimed hiho. Scooter might even whip some arse.

That's the way it is everywhere now. Nothing is as good as it was years ago. MBAs get involved in the production of ingredients and start cutting corners in order to increase profit then bullshite you with marketing that makes you think that there is something wrong with you if you don't think their cheap and now crappy product doesn't taste the same as it did 30 years ago. Cereal is that way now. Fruity pebbles taste like dog food and leaves a waxy film in your mouth. Catsup is nearly indigestible too.
