Generally speaking, they don't. Louisiana is ridiculously employer friendly and the courts hold very firm on the at-will stuff.
For frick's sake our court's actually consider an accepted offer of employment the same as being employed. Had to look into this earlier for a friend. Let's say you get a job offer. You take it but then the new employer comes back prior to your start date saying they didn't like something a reference said (Again, AFTER the employment offer was made and accepted). They can renege on the offer with no consequences. It's bullshite.
Friend of mine got offered and accepted a new job. Informed his new employer that he has given his 2 weeks notice and confirmed he could start on a certain date. New employer comes back a couple days later and says that "Sounds great. Also, we forgot to mention that we need a drug test and background screening prior to your start date." He was sure he'd pass the drug test, but he wanted to know if there was anything he could do if something popped up and they pulled his offer. Short answer: Nope. They have you by the balls.
