What are some very low maintenance plants that look nice but I don't have to constantly trim?

Define constantly trim. Knockout rose bushes are unkillable and only need trimming twice a year.

Dwarf azaleas, get the kind that bloom 3 times/year I forget the name.

For sun:

Knockout roses
Dwarf Nandinas
Sasanquas (Shi Shi is a great one)
Lantana New Gold

When you buy any plant, just be sure to read the tag and note the size at maturity. So many people plant things that will be too big for the space they are in, hence the constant trimming.

Not at all! I take the loppers and just start trimming all the canes until they are at about 3 feet tall. So easy.

If you like fragrance, the yellow Knockouts are the only scented ones. The double reds are my favorite though.

Daylillies and agapanthus are pretty carefree perennial flowers.

Ground cover grasses, taller grasses like purple fountain grass and something like Lilly of the Nile will give you some color.

Shrubs will have to be maintained, but only once per year. Gardenias are extremely easy and are my favorite blooms in Spring.

Those 4 would be an easy garden.
