I have a couple of coworkers that won't eat leftovers. 1 worked in the fast food industry for years and has PTSD from past experiences I guess. That person won't eat any meat cooked on the bone from a restaurant either. The other coworker says he had a really bad case of food poisoning before and just doesn't take chances anymore.
Screw em. I'll eat my week old casserole in front of them with no fricks given.

I've been known to cook things just to have them as left overs. Many things are better after they sit a while.
I almost never eat from a batch of gumbo the day I cook it

Sometimes things like grilled chicken or pork chops can get tough when re-warmed.
I freeze leftover meat that I have grilled and then steam it in a steaming basket on the stove straight from the freezer. Helps with the toughness.

Absolutely, unless it's something that's tricky to reheat properly.. Alfredo/Cream sauce dishes come to mind...
Add a splash of milk or heavy creme. Reheat for 30 seconds, stir, 30 seconds, stir, 30 seconds. Its like new.

I eat the hell out of leftovers.

Yeah it would be rare for us to cook a meal for 1 night. I'll cook in bulk so we can eat the next day as well.
If I cook steak or something then that will only be 1 meal but like gumbo or a casserole will be a multi day meal
