I think the simple explanation is kids can't read in script, so the a would look like an e to them, however, there are e's in the title so that doesn't make sense comparatively!
Maybe it all came down to how we were told to pronounce it?
I was told steen or stein (pron. "stine"). And we then, in those younger days told ourselves how we would spell it with the known vowel combinations we knew.
Who knows?

Berenstein has always been a name of controversy with people saying it wrong or reading it incorrectly, even a couple decades ago in its prime people struggled with it

The most logical explanation is the pronunciation. If it wasn't drilled in my head from teachers that it was "Stein" and sooooooo many people think the same then I would just write it off. This is one of those instances that it's rare to find people that remember it being the "actual" way it is (Stain) and more than 75% are getting it "wrong" that's a huge discrepancy for something as easy as Stein/Stain.

But what about Berenstain? It seems pretty easy to pronounce honestly.

7th book down... Pet Show. They forgot to photoshop that one. It still shows Berenstain.

7th book from top has it spelled both ways on the spine.

I got it. 9/11 was the day the parallel universe crossover took effect. That's why the photo is glitched to the original, and catastrophes happened on that day like planes crashing into buildings.
It's not Back to the Future, it's Donnie Darko. We need to follow the bunny and figure out what to do

I was born in 79 so I was 5 at the end of the commercial run so my memory obviously isn't too strong with it. I would just assume that people consider mikey the dumpster since the kids are passing it off to him. Hence why people incorrectly recall him eating everything. In the end, it would never be a surprise that a dumpster would eat it. Clearly the kids are surprised and everyone remembers that part.
Marketing at quaker oats wouldn't want to be putting out there that it takes someone who would eat anything put in front of them as a selling point. You want to show that even kids who dont like anything really likes this healthy cereal.

All we need to do is get the actual books from when we were kids. I think I have a few lying around in a box somewhere.

I'd imagine that in whatever alternate universe the Berenstein Bears existed, it also used to be true that going outside when it was wet and cold will make you sick and our blood is blue until it touches the atmosphere.
