I remember the days when Rouses would have ground beef on sale for 99 cents a pound.

With the aid of my little garden, it would be doable in the summer. But I would have to rely on beans, eggs and rice.
I dont think I could or would do it otherwise. Meat would break my budget.

I could do it but only because I live on a working cattle farm, like to fish, grow a big garden, and have a few fruit trees.

Quality or quality and healthy? Could do quality probably but probably not healthy. Of course I consider butter beans and corn bread a quality meal so quality is subjective....

Meat prices are insane. I went to a Rouses yesterday and beef prices are insane.
Ground beef was on sale for 4.97 a pound in family packs and not a single pack was in sight at that price. Only the smaller 1.25 pound packs at full price were left in the cooler. Each pack was about 9-12 dollars. I was like Holy Sh!t this hamburger helper is going to be expensive. I thought about getting a pack of ground pork instead of ground beef.
While I am not a big fan of government involvement of business, I think the cattle cabal has gotten fat and lazy with smaller herds pushing up the cost of beef knowing they can get a better price with a smaller herd pushing retail prices up.
There was an article I read that was saying how the price per cow has increased and the profit on each cow was more, but cattle farmers are content on leaving herd levels the same pushing up prices even more.

Dried beans and rice is the only way I can think of to stretch $12 into meals for a week.

We do the same, but toss in chickens. When the girls are happy, we bring 10-20 eggs a day.
I keep pushing a big tom turkey to keep snakes, hawks, eagles and fox away.
Plus we have Amish for chicken feed, and other products. In January my wife’s canning expands.
Granddaughter loves to garden.

She didn’t use yeast.
I have baking powder and it lasts a good while because you barely use any.
Same with her big container of salt. These are items you don’t buy every time.
If I want to make her bread all I need is to go grab flour. I don’t need to purchase other ingredients because I already have it.
It’s also not difficult to grow tomatoes and peppers. So in theory you could make it cheaper.

$12 might be tough, but I could easily do it for like $20.
Pork shoulder on sale for $.99 cents a pound. Cut two nice pork steaks off of it for the grill. The rest gets put in a crock pot for pulled pork tacos, or anything really.
Also, cabbage, sausage and rotel makes a tasty dish that you can eat on for days.

Probably a not-insignificant reason food prices have gone up so much in the last two decades. Wed we bought:
bought 2 hams @ 2.98
2 large pork roasts @ 2.35
Cut them up yourself. (do not skimp on the knifes)
pork loins are often 1/lb,
I slice them 1/2" thick, 3 in a bag and marinate in the freezer for quick grilling
had an amazing 1/2" thick ham steak last night, grilled.
our goal is to eat 4 star on < $5-10 per day. some meals are less than $5
so do-able with a freezer, vac sealer, and planning.
and basil grows like a weed in a good pot Houston...
we buy any meat under $3/lb
