I'm a degreed and licensed Environmental Engineer and recommend you switch majors to either Civil or Chemical.
A Civil or Chemical Engineer will be qualified for any job that an EV Engineer is qualified for but an EV Engineer won't necessarily be considered for other opportunities that consider Civil or Chemical Engineers.
Just some free unsolicited advice from someone that was in your shoes 20 years ago.

sure...talk to every single recruiter in the place, even if they are not looking for engineers...your goal is to get an internship or some kind of experience that you can parlay into something that looks decent on your resume. the importance of having something there cannot be overstated at this point....

Yeah.
Don't waste your time.
The way LSU's career fair is structured is pretty terrible. It's hot as frick and it's a complete clusterfrick with awkward conversations with recruiters and other students breathing down your neck.
I had no trouble finding internships on Careers2Geaux.

Look up the job listings online. They'll pretty much always ask if you've applied already. Some deadlines may have already passed as well with how the interviewing schedule works. You gotta stay on top of everything with that.
Also, internships before graduation are SUPER important. Do what you can to get yourself one.

As a frequent recruiter at career fairs, I'd say they are pretty important.
Be polite.
Bring resumes.
Have some personality.
Have at least a general idea as to what you are looking for... Even if just to say "I'd like an internship to get a better understanding of the practical work of my degree and not just the theoretical" or "I want an internship to learn more about the industry to make sure I am in the right major".
Don't dress like a slob (but no need to wear a suit or anything).
Ask questions about the company, the recruiters' jobs.
Ask for advice.
Recruiters note these things and will put marks on your resume to remember that you were an interesting candidate.
