I wouldn't eat it. If it were a cow brought to market, it would be much younger because young animals are carefree and haven't seen the types of shite that toughen them up yet and harden them against the world and their fellow cows.

...okay, I might not understand how it all works yet, but old animals are tough.

Don't eat it.

There's going to be more to the death than just being old.
Some sort of infection, disease, or injury caused the death. Cows are prey animals so they hide sickness well.

Also in these current temperatures, the meat will sour with quickness.
