I think 56 hours of one guy working and you working for free is reasonable.

Even if you have a carpenter that knows what they're doing, They have you and it doesn't really sound like you know much about carpentry.

Building doors takes time. Then to hang them. Then trim. Paint. Caulk, installing hardware. Etc etc. you don't just snap your fingers.

No offense but the carpenter probably doesn't really know what kind of helper you will be. He may not even be factoring you in as being any help when he estimated his time.

this.

it will be the most time consuming of the whole project outside of maybe getting the slab poured.

No offense but that is not an opinion you can draw from the information given. I know more than a common helper. Framing is not my forte' 56 hours for this job seems a bit extreme. I will agree building doors and hanging takes longer than a prefab job. But seven working days?

2 days to frame & deck
1 day for windows/siding
1 day for roofing/doors
1 day for punch out
8-10 hrs per day

also, you won't have much of a loft with 8' walls & a 1/12 pitch-
the ridge height would be only about 6" taller than the walls; assuming gable roof

I had a 12x16 barn style shed with a loft, side door. And double end doors built 2 years ago. Guy is based out of Houston and builds along the I-10 corridor. Showed up around lunchtime one day with a trailer of material. Nothing pre-cut. Everything cut and built on site. His helper was sick so his wife came with him to help. They started about noon day one, worked until about 6. Next day started about 8 and were done about 4.

Found the guy through craigslist.

If you have no clue how to put up 4 walls and a roof, you will be more of a hinder than a helper

Hard to give any type of accurate estimate when there are no finishing details.

OP, Watch some.YouTube videos and get to it. It's not very hard.

I built a 12'x20' with my wife and nephew helping me.

Also, put more pitch to your roof, at least a 3/12

that's pretty hefty!!!

I had a 6x8 a kit "TRU-BUILT" cost 900 took 2 guys about 6hours or so to finish including paint.

I wasn't up to the task...
