You are making a fairly common mistake in science. You assume that ETOH is the only chemical in alcoholic drinks that impacts a person's mood, there is rarely only one variable in a system.
Two quick examples to show the flaw in your thinking is red wine has lots of melatonin and the high carb content of can make one feel drowsy. ETOH is indeed just ETOH but the beverages contain more than ETOH.

That's the generic formula for alcohol, sure. However, the purity/quality is completely different from one to the next. When it's distilling, you have the head, heart, and tail. Certain alcohols, like champagne, will use less of the heart. Some cheaper alcohols probably have a wider range for what they call the heart and you get some shittier quality.
The formula is just the primary extent of the alcohol, but it will vary from one drink to the next as to exactly what's in the bottle.
And just extra info to think about, the tail end is basically ether and if you were to drink to very tail end of the distilled product, it could very likely kill you.

I consume liquor faster than beer, plus higher alcohol content (make my mixed drinks thick), making the liquor drunk seem "Wilder" than beer. It's really just more alcohol consumed in a shorter period of time.
