That’s because we are getting Basin crawfish by Easter. Almost everything now is rice field.

Seems like a silly theory. A percentage of the water component of the liquid seasoning may evaporate, leaving behind.... the seasoning.

I took my wife to Crawfish City in West Monroe and they were good. They use liquid crab boil which I'm not too fond of but I can say the taste was great. No seasoning on the outside. They weren't big but they were good.

I’ve heard people say this about Lafayette places too. I’ve had crawfish from multiple spots in Lafayette. Never had it on the outside. People like to start rumors and talk shite about a region generalizing.

I’m aware of that Judge and I’ve been eating boiled crawfish since before pond crawfish were available hence the comment. I remember buying them for $.10 a pound at Camp Bayou Corne and there wasn’t a restaurant in Baton Rouge that sold them. Only a few people were even doing backyard boils. That’s why I wait. When they play out at end of June or so I eat crabs which are then just starting to come in. Then when they play out in the Fall I eat oysters.
Don’t get me wrong I eat them now on occasion but I’m a creature of habit and enjoy the seasons. I only eat tomatoes and corn when they are fresh in season. I just do without.
And I’ll edit to add: if I go somewhere and they have a bunch of dry seasoning on the outside I eat a sandwich. That’s just not the way to boil or eat them.

some things nevah evah change. but ya'll got real ugly in this thread when there is no reason to. It is just some fun ribbing.
with all that said, got dang the prices sound like highway robbery to me but I haven't lived there in forever..

They were 2.50 live about three weeks ago. Then it jumped to $3, and spiked (no surprise) at Mardi Gras.
Supply is low with a lot of farmers.
I got a few hundred pounds of beautiful clean crawfish for $3 a pound yesterday, and that was a steal.

AB Henderson started the trend about 30 years ago. It was WAY to much seasoning on the outside. Not sure if they still are in crawfish biz.
