Talk to your roaster. Tell them how you prepare your coffee and what you're looking for in a flavor palate. They can steer you away from bitterness as much as possible.
Now, with that said, while bitterness is considered part of the complexity of properly extracted coffee, that doesn't mean you have to properly extract your coffee. Bitter notes are generally extracted near the end. So try under extracting your coffee to see if you like it more. Though, for whatever reason, I find pour over to almost always be a bit more bitter than, say, french press coffee.
But even with pour over, play with your ratios. Extraction is a function of ground size, water temp, and time. Assuming you are using the correct grind size for your filter, I would start by using cooler water (I brew at 200f) and using less water (in a french press, you can directly control time, but with pour over, your only real option is to pour less water, which is one of the reasons I'm not crazy about the method).

Had a coworker tell me about his intermittent fasting and I realized I’ve been doing it for years
Eat lunch at 1, dinner at 7/8, no other meals.

I weirdly like River Road. But I also like Community.
I don’t do any sort of creamer, but I love Equal. I’m a Diet Coke fiend, so it’s no surprise I love aspartame.
If I get it from CC’s, I do cold brew with sugar free vanilla. <5 cal

Thanks so much for this advice I will grab a bag of Reve whole beans this week. Not sure if there are any other local roasters in the Lafayette area.

I have to force myself to not accidentally fast. When my nerves get bad, I absolutely do not want to eat.

I inadvertently do this... just sorta got used to not eating but maybe once a day, if at all, but then eat lil I'm full, no matter what time of the day or night that might be.... really odd eating pattern, but it works for me, so....
