Except 1. It’s not. They made hogs head cheeses and 2. They didn’t do the same things with the I gradients.

A lot of what you’re saying isn’t true.
Maybe a few do, but realistically
Lost sandwhich shops aren’t making their own ham. I don’t think Hog’a Head Cheese is even all that common.
And the one name you bring up is Cuchon? Ok good company. Donald Links is the best chef/restaurateur in the city.
