Did Olave "fumble" the ball after his big catch

I don't think he was touched down by the defender after he got control of the ball. He gets up and spikes the ball, and the defender tries to get it before it goes out of bounds. I believe the refs spotted the ball where he went down, not where it went out of bounds after he spiked it. That spot tells me the refs thought he was touched, but I didn't see it.

Would have probably been an illegal forward pass. 10 yard penalty, Saints retain possession.

But to answer the question, maybe. When Olave was securing the pass, the CBs foot hit his legs thereby touching him. However, I have no idea what the rule is because I believe the touch happened before the possession was secured, but also on the way to the ground.

I think you are correct here but not entirely certain.
ETA: Is it possible the fact that Olave began to fall subsequent to a push by the defender it may have been ruled that caused him to be down? So even though possession happened after the push, the push happened after he initially touched the ball, and effectively the rest was the act of catching the ball. If that makes sense.

I won't argue the touched down or not aspect. Don't really care either way as the result would be the same.
As for the question of IF it was a fumble why wouldn't it be spotted where it went out, you cannot fumble the ball forward and gain progress (unless regaining possession). If a ball is fumbled forward out of bounds you get the ball at the spot where the fumble occurred (if fumbled backwards you get it where it goes out instead).
