Billy Jo Shaver- Wacko from Waco mentions Willie Nelson
Tanya Tucker- Texas When I Die. (I'd ride through all of hell and half of Texas just to hear Merle Haggard sing a country song). I've also heard a version where she says Willie Nelson instead of Merle Haggard. Ed Bruce originally wrote and recorded it, but he sang it as "just to hear some steel guitar and a cowboy song."
Alan Jackson-Gone Country (don't sound much different than Dylan). Also Midnight in Montgomery.

Patty Loveless- Try to think about Elvis
Can't remember who it's by, but there's a song titled Carl Perkins Cadillac.
