What do you think about having bagpipes, flutes, and violins mixed in with heavy metal guitars, drums and headbanging Viking descendants.

I like it, been listening to some Russian and Eastern European folk metal. I have no idea what they're singing, but it seems to work anyhow.

I definitely like it too. I hadn't seen the videos that you and BigScrub linked, so thanks. This type of music is definitely a nice change.
Here's another one I found that I like.

Love it. There's a pretty wide variety and range. Some folk metal is more folk with heavy guitars mixed in almost like a metal version of The Pogues. Cruachan falls in that. Some is much more on the metal side, i.e. black metal with some folk instrumental and musical elements included, like Equilibrium. Nightwish uses folk elements in their power/symphonic metal.
Eluveitie is definitely one of the best out there in this subgenre. Agalloch is another big favorite of mine, one of the seemingly few American based (both musically and physically) bands, though the "folk" element is mostly some acoustic guitar and poetic lyrics.
Some others I've heard and like: Cruachan, Ensiferum, Falkenbach, Finntroll (these guys can be really nutty fun), Skyclad, Týr.
One of my favorite subgenres is Middle Eastern influenced or "Oriental Metal". Orphaned Land is probably by far the best and best known. Melechesh is "blackened Sumerian thrash" although the further you go in their discography the further away from the folk/ethnic sounds they go. Myrath is a very cinematic power/prog band from Tunisia that I like a lot.
Samples of a few favorites:

Melechesh: This one has some straight up belly dance type rhythms: Secrets of Sumerian Sphynxology

Panopticon from Kentucky are folk-tinged black metal. He started with mixing in bluegrass elements, lately he goes back and forth between the metal and what I'll call atmospheric folk/bluegrass.
Recommended for fans of any atmospheric black metal.

I was going to mention Panopticon. The Kentucky album is the most heavily folk, with straight up bluegrass instrumentation on it.
