His self titled debut album is probably his best. The two disc anthology, Great Days is probably a good beginning point for someone getting into him for the first time.

Self titled album is some of the best folk music I’ve ever heard.
Songs about war, about drugs, about family, about sorrow. It hits it all. Thought provoking, catchy, beautiful music.

"Paradise"
My favorite version is this bluegrass cover by Jim & Jesse McReynolds.. It inexplicably, almost unforgivably, leaves off Prine's great last verse, although the classic key change near the end kinda makes up for it.
