Because real hunting would be boring as frick to watch.
Just like fishing and golf. They’re fun to do, but hideously boring to watch.

I agree with your original question but for different reasons. I don’t really take much issue with the wrong deer species and in fact I think they get the species correct more than wrong in most films.
My issues is with the hunting tactics they show. Usually it’s someone walking thru the woods and sees a deer 20 yards away and then stops and shoots it. I wish it were that easy.

Never paid attention to the drinking, but ever since reading an article about why they don't actually eat their food on BBT, even though damn near every episode will have scenes revolved around eating. I do notice that in every show/movie I watch.

that's not completely accurate on a professional, studio film. We go to great lengths to portray things accurately. I am on a project now where we had a large, FBI office build and were in constant contact with our consultant (a former FBI agent). So much so, the question of what kind temporary fasteners would they use on an investigation board.
Many period films have dedicated researchers to flag any anachronistic items. There is great care for getting it right --- hence the advisors (med/military most commonly), researchers, fact checkers, historians etc that are hired as part of the production.

The most annoying to me is how no show/movie has ever taught someone how to properly pull back or shoot a bow. They either hold a traditional bow back for 10-15 seconds aiming or they pull it back up to their eyeball and release
The worst one ever was with Gerard Butler, forget the name of the movie. He sees an ELK across a lake, and it like hundreds of yards away. He's going to shoot it with a RECURVE bow (good for about 30 yards) But he changes his mind when the ELK's supposed wife and kid show up and they are not elk, but instead WHITETAIL DEER
