I don't remember GUTS. Was it in the late 90's? I guess I stopped watching Nickelodeon around '93-'94

Guts and Double Dare obviously.
But American Gladiators trumps them all.
We used to try to recreate the games in my backyard. The one where you get to shoot the tennis balls at them was the best. We were stupid and lucky. We had the guy running through with a pellet gun that he had to load at each station and then try to shoot a coke can, since you could hear that, that was a few feet from the 2 guys throwing tennis balls at him. we are fortunate we never made him miss badly and hit us. idiots.

YCDTOT is prolly the overall GOAT Nickelodeon show though.
As for game shows, I think the GOAT has to be Double Dare, with Guts/GG coming in a close second. But Double Dare is what started it all I believe.

Pie pod was better because every once in a while the kid would be too short or the parent would be too tall and the pies would miss and they got out relatively clean. It wasn't a guaranteed pie splatter like the pie coaster. Kind of added suspense.

Legends easily, GUTS for #2
Maybe for an employee that saw it every day, but my wife's uncle was a high up HR manager for Universal Studios back when they had the Nick studio in Orlando. She got to watch them and said it was even more awesome IRL from a kid perspective. Probably would disappoint us now though.
The one I hear about that was the worst is Nick Arcade. Kids had no idea WTF was going on 99% of the time in that show.
You had to audition for it.
