It's not a book per se, but the short story that The Shawshank Redemption is based off of. As well as Stand By Me.

no but really, the LOTR's were very well done.
One Flew Over the Cuckoo's Nest(I didn't really like the book...though I was pretty young when I read it)
Babe- The movie brings the book to life
Blade Runner(Do Androids Dream of...something. Good book and movie, imo)
Fight Club(I thought the movie flowed a lot better than the novel...if that makes sense)
