I would like to see the Pendergast books made into a movie or series. They made Relic, but they cut him out of the damn movie.
Zelazny's 9 Princes in Amber would be great, but good luck getting the rights from the estate. After the abortion that was Damnation Alley, they kinda pulled the plug on that one.
I would like to see Tin Roof Blow Down made.
Piers Anthony's Xanth books and world as a kid's show with great animation would be kickass.
American Gods really needs to be a movie, but Gaiman hasn't done really well in the movie business--Coraline being a notable exception.
Oh...and Tyger, Tyger (The Stars My Destination), but that shite is flat out unfilmable.
Richard Kadrey's Sandman Slim books.
The Monstrumologist series would be cool too.

I would also like to see them take a stab at remaking the Eiger Sanction, but who do we get to play Hemlock? Not many Eastwoods out there.

Not technically a book, but I would love to see a Pixar version of Calvin and Hobbes directed by Brad Bird.

That would be cool. Boondocks has done well as a series, but the subject matter is a bit more adult. I think it could work, Baby Blues did pretty well in its limited run.

Can't say I'd blame them really. As nice as it would be to see Corwin and company on the screen, it would be a really hard series to translate well to screen. I think the odds would be enormously low that it would be done well.
I could see Lord of Light being done well as a movie though.

They'd have to go the mini-series route, but there is tons of material there to work with. Zelazny was one of the last of his breed. He wrote short, powerful prose. He didn't need 900+ pages per book to build a world.
The difficult part could be incorporating enough back story to understand the twisted family dynamics. frick, I just wanna see Random on screen.

Well, that and the budget would be ridiculous as well most likely, with all the different sets for the shifting worlds. It would need the budget of something like Game of Thrones, but would be far less likely to come out well and doesn't have the built in following for name recognition (and I say that as someone who would definitely have Zelazny in his top 6-7 fantasy authors, but he's just not as well known among today's crowd as many others).
But yeah, you could have 15 seasons worth of show material easy.

How about the Wild Cards series? As episodic as the stories are (being written by various fantasy and scifi luminaries) and the pull that the big fat one has in Hollywood at the moment, is there a chance we see this series translated to the screen? Or would it be too pricey and out there?

I honestly have never read any of the Wild Cards books, but with the popularity of both Martin and superheroes in general it could probably do well I would think.
If some other Martin works were going to get made I'd like to see Fevre Dream made into a movie, and Tuf Voyaging made into a mini series or movie, with Ron Perlman as Tuf.
Altered Carbon by Richard Morgan would be an excellent sci fi movie as well.

Agree on Swan Song and Am Gods as mini- series and Preacher would make a badass HBO series. Would love to see Joe Abercrombie' s First Law trilogy on the big screen.

Grisham's novel "will play for pizza" would be a great one too. It's about a Qb who goes and plays in the Italian league because he is the laughing stock of the nfl.

I like Fevre Dream. It was the first Martin book I ever read. I can't really see it as a movie. A little too slow and depressing, and it's not until the coda that things turn around. I can't imagine how an audience would feel to watching a two hour movie, the hero losing, and then everything being made right in the last 5 minutes.
Wild Cards could have some issues with who owns each individual character. Martin wrote a few, Zelazny wrote a few, 30 other authors contributed to the world. Since it was primarily an anthology prior to the last 4 books, I wonder if each author retained the rights to their individual characters.
