This. and pretty sure Mr. Matthews even spelled this out at the end of the episode or in a subsequent one.

He was just upset that he failed to raise his kids well at all. He was a shitty dad pretty much the whole show and a worse husband

Agreed, he just looked like a good dad because Shawn's dad was so awful. Mr. Matthews had zero expectations of Eric and it ended up crippling him. Maybe that's why in this episode he was so tough on Cory.
