He was just upset that he failed to raise his kids well at all. He was a shitty dad pretty much the whole show and a worse husband

Agreed, he just looked like a good dad because Shawn's dad was so awful. Mr. Matthews had zero expectations of Eric and it ended up crippling him. Maybe that's why in this episode he was so tough on Cory.

Regarding the plumbing, Alan just wanted to challenge Corey to try to figure it out himself first.
