TV Relationships that were much better before they got together.

Oftentimes TV shows will have a fantastic dynamic between two characters that are attracted to each other, but aren't together. That special dynamic inevitably dies when they finally get together. I saw this most in:
The Office - Jim & Pam
Smallville - Clark & Lana
New Girl - Schmitt & Cece
What are some other examples?

I'd say that 90% of the time, the show suffers. So, there will be a lot of examples. I'm just going to mention one that I think didn't have a negative impact on the show.
Jake and Amy getting together in Brooklyn 99 has been at worst neutral impact on the show. I'd argue that it has almost made it better.

I like Amy, I just find her 0% funny.

the original hookup mistake was on Moonlighting with Cybill (Maddie) Shepherd hooking up with Bruce (David)Willis.

I was about to say, OP is pretty easy. Better question would be what new relationships in a show made it better and this is a great example

The time it took for them to hook up was extremely unrealistic too. Two high school kids that looked like models would have been fricking like rabbits, especially given the dude saved her like 12 times.
In a show about Superman, this was by far the most unrealistic part.

Yeah, that pretty well killed the main dynamic for the show.
Though it worked out for Cheers in the long run because they had to focus on the secondary characters and hit a comedic gold mine.

That's the great irony about this situation. The audience wants to see the union more than anything, but the union inevitably winds up draining the core tension carefully developed by the show. It's strange because I hate shows where you just know the main romantic interests are never going to get together and instead just tease and string the audience along. I'd rather the former situation over the latter.
But to answer the question posed in the original post with an example not already mentioned:
Jack and Jennifer from Days, brah.

Nick and Jess on new girl. Schmitt was always great

Yeah that's the best example.
The sexual tension between Sam and Diane was off the charts...(Pam and Jim were good friends who slowly morphed into lovers after they got the other SO out of the way. But they weren't secretly making out in the stairwell and humping in the copy room like Sam and Diane.)
Sam and Diane were firecrackers from the start - pure sexual desire...they didn't even like each other as people - he hated her, she loathed him - but they wanted to jump each other's bones anytime they got.
Once they got together, they were just a boring couple - bickering, Diane trying to change Sam...and Sam realizing all the poon he's missing that he used to get.

Cuddy and House
Pretty much every relationship on House now that I think about it.
One that made the show is better is Vegeta and Bulma on Dragon Ball Z/Super.

I know everybody here thinks every episode of The Office ever is 10/10, but when Pam and Jim started dating I took a huge step back. The over the top "cute" shite was annoying, while the flirting/we want to be together but can't, is something very relatable.
