The movie is very deep. The whole movie is about free will (momma's take) vs destiny (lt. Dan's take) vs how it is "a little bit of both happening at the same time" (Gump' s take).
Not only that, but the whole movie is one example of free will and destiny intertwined after another. It gives Forrest's destiny and the positive choices he makes within it and, by contrast, windows into Jenny's destiny and her poor choices within it.

I didn't take it as they were going so much for the joke aspect, the movie was heavily focused on reliving the nostalgia of the times.
I'd have liked to see them spend more time on a phase of his life rather than jump all around so fast.

That's not the point of the movie. Forrest is just the vehicle that we experience America through.
