One thing I don’t quite get, the armorer talks about the Jedi like it’s some ancient relic of an order, “ancient sorcerers,” but per the timeline the phantom menace was like 40 years before the Mandolorian and there were hundreds of Jedi knights then that were very open figures in the republic.

The emperor made a point to destroy all remnants of the Jedi.
He destroyed temples, had Vader hunt down Jedi that escaped order 66, etc.
Plus, there were 10,000 Jedi at the height of their power in a galaxy of trillions of life forms. Very few ever came into contact with a Jedi

They are dead or in hiding. The last episode of s1 they found the pile of armor that the Armorer was melting down. It was from the Mandos that helped him. Some got away, but the Armorer doesn't know their location.
