I was thinking about this thread the other day. I've watched a few docs recently that I wanted to add to this thread.
Led Zeppelin IV (Pluto). Decent doc, but it's mainly just people talking about the album/songs. Which is fine I guess, but I prefer more information and history from the people involved generally.
Pink Floyd Behind the Wall (Pluto). I actually don't remember much about this one.
Becoming Led Zeppelin (NF). This one was good, but I was a bit disappointed in it mainly because it covered so little of their career (but it's more about them "becoming" the band I suppose). But it's still worth checking out if you like LZ.
The Day the Music Died (P+). This one was good, although a little bit full of itself (which is to be expected I guess). It's a great song, but not quite as awesome as the doc makes it out to be IMO. But hearing DM talk about the verses is cool.
Billy Joel: And So It Goes (HBO). Some really good discussion in my thread about it from the summer. This one is fricking excellent and a must-watch if you are a Billy Joel fan.
The Last Waltz (Tubi and Pluto). This is one that I had always wanted to watch but never did. It was good, but that's about it. I liked hearing the songs and I like The Band fine enough. But it's more just watching a concert than actually learning anything.
Dean Martin: King of Cool (not sure if this is free anywhere). This one is more about Dean Martin himself rather than a straight up music documentary. But since he is such a musical icon I am including it. I enjoyed it a lot but I love DM.
Stans (P+). About Eminem fans (for the most part). I stumbled across this one and am not sure what I was expecting, but it's just fans of Eminam talking about being fans of Eminem. It's just not very good, even if you're a fan of Em (which I am).
One to One: John and Yoko (HBO). I love the Beatles and don't give a frick about Yoko, but this one was actually pretty good. I don't think I learned much from it, but the music performances alone are worth it if you're a Lennon fan. He actually sounds great in the several concerts they used clips from. I've gained more of an appreciation of Lennon lately, and this doc is one reason why. It led me down his discography and I've become a fan of more of his songs.
The list in the OP/first response is updated through this post.

saw a couple of Dylan docs, and a couple of Scorsese films, but not the this one
technically a two part episode of PBS American Masters
extensive behind the scenes look at Dylan from 1961 to 1966, chronicling his transition from beloved folkie to rock’n’roller

Thought about this thread the other day because I rewatched The Two Killings of Sam Cooke. I also watched Becoming Led Zeppelin. I was kind of like you, it was good, and that's about it. Worth the watch but not great, was expecting more.
You really need to watch Searching For Sugar Man. Widely viewed as one of the best documentaries ever, not just best music documentaries. Think it's on HBO.

Watched this 4 part documentary on Canada’s The Tragically Hip. I love music docs, and this one was right up there with the better ones.

Already in the OP.
But that is a great one though. I loved it.
