I'm guessing that Forrest was the buy and hold forever type (if he even remembers that he still owns Apple stock) so it's not too unreasonable that he owns about one-half of one percent of outstanding stock (after initially selling to fund his Bayou Batre philanthropy)
That puts him at close to two billion. Of course, Forrest Junior was alleged to be a budding genius (though this could have been bragging on Jenny's part) so he might have either diversified Forrest's portfolio and either greatly multiplied his net worth or stolen everything.
Lt. Dan, on the other hand, jumped full bore into the greatest bull market in history and the initial internet boom so he's worth north of thirty billion and owns his own island somewhere.

Throughout the book, Jenny appears to Forrest as a guardian angel, and advises him to "listen to Lieutenant Dan." Lt. Dan frequently mentions a fondness for oysters, and oystering re-vitalizes the Bubba Gump Shrimp Company.
