I’m not a GOT watcher, but this sounds similar to How I Met Your Mother.
I used to not only watch the live episodes, but could binge watch the syndication reruns as well. Once the last season and finale came out, I can’t even enjoy watching an episode

I'd say the same as Lost or Battlestar Gallactica.
Several amazing seasons soured by a piss poor ending.
I've considered re-watching Lost and BSG a few times, then I remember how the endings tossed all the plot arcs, character developments, unanswered questions, and plopped a fat greasy steamer on the table for endings.
I can't go through that again.

I did a complete rewatch of the series before the final season came out, and I'm glad I did.
I don't think I can do it again now. I'll try eventually though.
