I honestly would say no. Not many of the long arcs are finished in the first 7 seasons so the payoff would be small for watching the first 7 seasons without an ending and that is the gripe that so many have about it. The ending is such trash that no one can believe that is where we ended up after the first 7 seasons.
I wouldn't want to watch something that has so many stories going on over the course of the entire show knowing that there was no pay off at the end.

i watched Blackwater yesterday. i don't even count the show ending as canon tho. it is still unfinished like the books in my mind. still waiting for Jamie to get his redemption (although he did get some of that in Winterfell until he just did a 180 and went back to cersei)

In hindsight, season 7 is where it started to go off the rails. I saw the problems with it as they were happening but still defended the season among the haters here at that particular point in time. I even defended the first two episodes of season eight from haters who said the show was moving too slow.
The Long Night is where Game of Thrones jumped the shark for me. The show was dead to me when they had Dany nuke King's Landing. And then the series finale just killed any re-watch potential the show might have had.

First half of season 7 was ok when I watched it. Then when they went North it got bad.
Just had to get the NK a dragon when fat man had already presented a horn to be used to bring down the wall
