why the elaborate ambush plan at minnie's in the first place? wouldnt it have been easier to ambush the stage en route? and once they decided to stage at minnie's (and murder half a dozen people just to get situated) why didnt they just shoot ruth as soon as he walked in? what was the point of the stage play? wallace/mannix/OB were all still outside and they didnt even know who wallace was until ruth told them (in other words, they didnt know he was a threat).
great movie but none of it made sense as far as the logic of the plot goes

Didn’t they know a massive storm was coming?

they did...how would that keep them from taking the easy path? all they needed to do was kill ruth

John Ruth was a pretty famous bounty hunter at that point and i think if he felt something was coming, he'd have just killed her despite the "hangman" moniker.
He was pointing a gun at anything that moved on the stagecoach so an ambush after their guard was down (which he never did despite getting poisoned) made more sense. SLJ's character being just as vigilant is the only reason they didn't get away with it.

yes they would gotten away with it if not for wallace, but they didnt know wallace would even be there. so why the elaborate plan? just shoot ruth when he walks inside with daisy

I remember reading the script prior to the release of the movie, and it was much different (and better, imo). Same w/ the Django script. IDK why but Tarantino often switches them up last-minute.
In the original script, the only ones alive at the end were Mannix - who was shot five times - and Oswaldo, who was shot in the stomach (ala Mr. Pink in Reservoir Dogs). Both were likely going to die due to the blizzard and inability to get medical care. Warren had been killed by Jody, who was hiding under the floor.

Well where's the fun in that.
I guess they could have bum rushed him but she was handcuffed to him and they easily could have shot her in the scuffle or Ruth would have killed her. He was incredibly jumpy and even though wanted to see her hang, he didn't seem like the type that would hesitate under the right circumstances.
Also, poisoning the coffee was the smarter way to go so they probably figured that was the lowest risk way to go.
Unfortunately for the Jody Domergue gang, Ruth's coach had room for this man.

Better movie, with Eight in the name, featuring Samuel L. Jackson?
The Hateful Eight (2015)
or
Hard Eight (1996)
