Could have been, I don't totally remember, but I thought that Thoros was part of his own group. He was part of the initial group sent out by Ned.

No one "holds" Winterfell at the moment. The Bolton's may have a few men there (they were the ones to report that Winterfell had fallen and everyone there was dead), but that's purely speculation because if anyone has even a handful of troops garrisoned at Winterfell hasn't been mentioned (that I remember).

They did. He was in the throne room when Ned was acting as Hand and he directed him to hunt down the Mountain. It was just a different actor then the one they're using now.

What do you mean "reclaim"? The Boltons are Stark bannerman. A group of Boltons was only sent there to take it back from the 50 or so Ironborn that Theon had. Most of the Boltons are south of Winterfell fighting.

More than likely they left a couple of men, but since there's no fighting anywhere nearby I think that even if they did leave any that it would be only a handful.
But again, it hasn't been stated one way or the other, so it's just speculation.

Don't really think there's anyone there at all currently. After it was burned it seemed to be abandoned. Bran, Rickon, Hodor, and that wildling chick didn't exactly sneak around the place when they left the tombs.

I thought it was Bolton's bastard son that sacked Winterfell. I knew he killed the Northmen that were going to retake the castle from Theon.

There was no "sacking". Bolton's bastard was sent by Roose Bolton to retake Winterfell from the North (he mentions in Season 2, "I'll send my bastard"). The Ironborn took a look at their host, and cut a deal with The Bastard. He got Theon as part of the deal, while they went back to their ship. The show showed them putting the hood over his head at the end of last season, but never really showed the next steps of how he got into the possession of The Bastard of Bolton this season. There was more to it in the book, but this is the gist of it. A big part (to me at least) was that Ser Rodrick was offed in the process. He was the white haired guy that Theon struggled to behead last season.

Ser Rodrick was betrayed by Bolton's bastard and murdered prior to the assult on Winterfell, his corpse was what was used by Bolton's men to gain entry to the castle. I don't think in either the book or the show it was the Ironborn that set Winterfell a fire.

That actually would have been awesome. Would have been a cool reveal when he came back later.
I always felt that they kind of didn't do enough in that scene. They could have really explained a ton of backstory with Loras and Mountain.
As a non-reader at the time, I really didn't even realize who the hell those two were.
Especially Mountain. Hell, even at this point in the show I don't think they've done nearly enough for the non-readers to a) realize who he is, he's just kind of been standing around, and b) realize his importance.
One of the few things I think the show has really dropped the ball on.

There are a ton of moving parts in the book, they've had to scale that down for television but there's still a LOT going on here. Even with that there is still more going on now than goes on in most other shows.
The scaling down has meant some characters have been combined into others and some storylines (like Ser Dontas) are completely dropped. This has made it interesting (at least for me) to see how the writers take the various plots from Point A to Point C while completely avoiding Point B.
And then there's things that weren't even in the book (like Littlefinger's speech with the two prostitutes while they were "auditioning" for him), Theon's speech in the sewers last night, etc that help flesh the stories and characters out more for those that have read the books.
