Why is it so hard to believe bran and rickon are dead? Everyone who has read the series says no character is safe.

I think the boys are the two orphans bran sent to that farmer to help because they were at his farm

It would. But the storyteller in me says it's more likely that Theon found no trace and had to come back with something. So he finds and kills two random, innocent children to bring back in an effort to save face. Fits his mode as doing more and more despicable actions that gain him less than he's losing as he destroys every good thing that ever was given to him.
