The fact that she got out at all, went to college, ended up involved in the 60s counterculture is pretty amazing. And it's not surprising she eventually wound up on the wrong side of it.

AIDS treatment improved radically in the 90s. We can assume the end of the movie is set in 1994, the year the movie came out. Jenny may have missed the window on reliable AZT and other treatments, but by the time it manifested in Forrest or Forrest Jr, it had become a much more manageable disease.
