If you read up on his actual business, he focuses way more on grooming talent, personnel management, and relationship building. That's part of why every episode has him focusing on family dysfunction (if present) and lack of managerial interest/control - he really does work on those things.
I'd watch a whole hour of him talking about $/sq. ft, profit margins on drinks, etc but no bar can even begin talking about that if the owner is sexually harassing customers or drinking on the job.
Of course, he did invent the "butt funnel" but most of the renovation stuff is guided by Spike producers.

I used to enjoy the show, but it got too staged. Like there was one episode where a person was wearing a Kansas City Chiefs hat and they put tape over the logo. Naturally, this was the person who ended up starting shite and getting yarded.
The best one of all time was either T.J. Quills or this gay bar in Vegas. The owner was a crazy guy who would get wasted and throw drinks at the bartenders. When they revealed the bar to him, he said "I hate it" and walked out.

It used to be appointment viewing for me but the show just became repetitive and too staged. It is fascinating to see the business aspect of the bar business and everything that goes into it.
The best moment was when he was trying to turn around the pirate bar and told the owner “Do you want to play pirate or do you want your kids to go to college?”

The Pirate Bar episode had me in tears. The Italian playboy chef, the waiter that actually needed an eyepatch. Good TV right there.

I can't get over the fact that he comes from an insanely wealthy family - grew up with servants in the house and everything. Then he moved out to California to be a drummer in a rock band. Played as house drummer for a bunch of shite bands so much "the owner just tossed me the keys to the place".
He's lived a very interesting life.

It's such a weird show in that every week I almost cancel my season pass for recording it only to watch that week's episode and not do it
It's a decent/good show but it's just so damn repetitive in format
--At some point during the stakeout John is gonna see something that really pisses him off and he's gonna storm in the restaurant yelling
--after that either the owner or someone under the owner is going to be upset about how John talked to them and prolly threaten to quit
--John gets that person to come around
--They fail the "stress test"
--John remodels their bar/buys them some new equipment
--they pass the final test and everyone lives happily ever after (most of the time)
This isn't rigid and every single episode isn't exactly like this but it's always pretty close. Just gets a little predictable
The other thing I don't like is how some things are obviously faked like during the "stake out" part they will try to act like there are hidden cameras in the bar but then some of the shots obviously come from cameramen standing right in front of the employees but that's just part of it with "reality" tv
