The prequels should've been like this:
Episode 1: Hybrid of TPM and AOTC. Instead of being a kid, Anakin should've been late teens/early 20's.
Episode 2: Hybrid of AOTC & ROTS. Anakin turns to the dark side at the end of the movie.
Episode 3: The formation of the rebellion and Vader hunting down Jedi & wrecking shite all over the galaxy. Basically Rogue One with more Vader.

I like rebels, but rebels and the clone wars continue to make things I like about star wars less unique, mysterious or interesting
I thought boba fett was super cool and kind of unique...turns out there's a whole planet with billions of people just like him...so it kind of ruins that for some people.

I never saw much reason to have Episode 1 set so far back in the timeline. He should have been about the same as as Luke. While I love the character, I'm not sure Qui-Gon was necessary to the film. Obi-Wan should have been more of a friend to Anakin and less of a dick. Throughout the entire trilogy, the Obi-Wan/Anakin relationship is incredibly strained. Episode I is Obi-Wan not understanding why they picked up Anakin, not understanding why Qui-Gon wants to train him (and only training him out of reverence to his master once he dies), etc. Episode II is like Obi-Wan is the bad parent trying and spectacularly failing at disciplining his bratty child. Yet by Episode III, they throw in these goofy token moments where Obi Wan finishes Anakin's sentence and things like that to show what good friends they are, but they've literally not built up to that at all. The dynamic should have been much more like TCW cartoon.

I think the Disney canon will continue to pull ideas from the old EU and dumb them down for mass audiences, making certain characters like Thrawn or eras like The Old Republic far more simplistic and less interesting.
That said, the Mandalorians as a race of people are pretty well beloved in Star Wars fandom. I think the Mandalorian background enhances Boba Fett's character. Without it, he's just some dude in random space armor.

he looks cool. his costume design, body language and lack of dialogue create intrigue but they tell me a lot of basic information too.

it's like every bad guy has the name darth and has a red lightsaber...I just thought darth was an evil sounding name and he was a fallen jedi so he made his lightsaber red to signify that he's evil. now the emperor is darth, there's other people named darth, and they all have a red lightsaber with a gimmick
I thought kylo ren's lightsaber was cool because it kind of told me something about him...he's not a finished product, he's wild and unstable, he's impulsive I guess and he's different. wish it wasn't red, but more importantly they didn't call him darth...so all in all it was a big win

I agree, though I don't have a problem with Episode 1 having a little bit of him pre-jedi training to show how he was found, just not an entire movie. Hell, have him come home to his mom being slaughtered by the sand people when he was just a kid, and he goes into a force rage/explosion more powerful than anything ever done before that yoda was able to sense. That way, you get a bridge into why it is believed the prophecy is about him without the stupid midichlorian crap.

What should ruin it even further is that Boba Fett is just a clone and not even Mandalorian. Neither was Jango. They were just bounty hunters that killed a Mandalorian and took his armor.

There's a lot of mystique that was built up after Empire.
Mandalorians are all good and everything if you like that.
Some of us grew up with the original series, and we formed our own ideas about things.
I read a book about Star Trek a long time ago, before they started making newer series or movies (and as I remember right, before Star Wars), and the difference between a series and a movie was discussed by some of the creators.
Basically, a movie (you can extend that to a trilogy or a miniseries) spends all the time building up to a climax, the biggest moment in the hero's life. Nothing following is of much consequence.
A series can't do that, because then you have nothing afterwards. You have to have multiple dramatic climaxes, in order to keep it interesting.
Those multiple events can't be too great, or your hero becomes a cartoon instead of a realistic person you can relate to.
The more you continue the Star Wars saga, especially by focusing on the Skywalker line, the more this becomes cartoonish, and loses a lot of the original charm. Luke's no longer the farmboy kid who saved the galaxy, he's now some legendary master.

Everything about his appearance told you something about him and like you said he speaks in a cold and direct manner to Vader without consequences. Vader respects him and so we respect him because Vader is a bad mother fricker.
He has blaster marks and bullet holes and a torn cape so he's been in the shite and he's alive. He carries his rifle like Clint Eastwood and seems at ease. He's the man of few words who you do not want to piss off
But if you watch the Star Wars cartoons or read the books I guess...he's just one of billions exactly like him

He's gone from the mysterious lone gunman, to some dude wearing Russian camo. Because, y'know, we need backstories.
Same thing happened with the Jedi, at least in appearance. Ben wears an earth-tone robe because he's a hermit on some dirt-poor desert planet. If you notice, Luke and his family are wearing similar clothing. It makes perfect sense in that context. Even the Jawa dress similarly in that environment.
But wait- no, he's wearing his special Jedi robes, that all Jedi wear. They're all rolling in it in the prequels, whether it's in urban areas, in space, or anywhere else.
Which would seem to not be a good idea, since Vader has spies everywhere trying to track down any Jedi he can to kill them.
There are things just better left to the imagination.

I ended up seeing this before jumping in, and it helped a lot, but it's probably too late at this point for you:

I thought after watching the Clone Wars that I'd appreciate Episode III a bit more. I was wrong. Now I just wish the prequels were redone TCW-style.
