I started reading them nearly 25 years ago and I've read them all.
On an epic like that, when does it end? It could be 1 book, 10 books or 100 books. It was originally supposed to be a trilogy.
I know we are going off of what GRRM has said and what we expect to be the total book count of 7 in the series, but it seems silly to not ready such a great piece of literature because of something like that.
Even after 7 books, there could still be unanswered questions.

So if the first book in a new series is released of a planned 5 books, you will wait until all 5 books are released before you read it?
The first book was released nearly 30 years ago. Should we have all waited until book 7 was released before we started reading them?

I'd argue the fact that they filmed a show that did in fact end means that GRRM does have an ending in mind. Hopefully a better ending than the show provided.
Like I said, at the moment, the fact that I don't believe the series will ever actually be finished is holding me back but I am willing to bet that I will read them eventually. Probably after I finish the other works he has published in this world.

Even that ending had unanswered questions and could still spawn future episodes if they chose.

Don't get too invested, because he hasn't finished any of those either (Fire & Blood, Dunk and Egg, etc.)

incorrect. I am in the middle of 2 other series as the authors churn out new books. The difference is that these other authors pump out a book every year or two. GRRM hasn't put out the 6th book in 13 years despite having a TV show that was relying on him finishing before they got to the end of the show. If that's not motivation, then I don't believe he will ever finish.
