Watching the replay, I don't see how the ump could call him safe. Is there another angle from above showing no contact with the glove?

All of this debate on the tag... not one mention of how beautiful of a play that was by Beltran. That video is a perfect example of the outfielder setting up to make a throw and executing it perfectly.
And, Ellis' elbow did hit the wrist band of the catcher's mitt. Not easy to see with the angle of video, but a tag was made.

Not reading all of the threads on this, but in my understanding, when the runner goes for the "plow through the catcher" play, as long as the catcher hangs on to the ball and isn't facing the complete opposite direction, he's going to be called out.

This is pretty much it. Same with a double play at 2nd. Doesn't have to actually touch the base or the runner. Ball beats you and you're out. If Ellis slides head first trying to avoid contact, the ump will look for actual glove contact. In a collision he doesn't care.
