Just because something doesn't end in s doesn't make it singular.

Would Irish not be referring to a collective group?

You can have multiple wolfpacks. Wolfpack is a singular group.

Tulane Green Wave
Stanford Cardinal
Alabama Crimson Tide
St. John's Red Storm
Tulsa Golden Hurricane
Illinois Illini (although this may technically be plural)
Notre Dame Fighting Irish
North Carolina State Wolfpack (collective, but not plural, there could be more than one pack of wolves)
Harvard Crimson(?)
Marshall Thundering Herd (same as with Wolfpack)

Pro:
Utah Jazz
Tampa Bay Lightning
New York Liberty
D.C. United
New England Revolution
Philadelphia (MLS team, can't remember the name, but it's one of these)
Miami Heat
L.A. Galaxy
Houston(?) Dynamo

That's all I thought of off the top of my head.

Collective nouns. I thought they were considered singular?
Is that what you call words like lightning and heat that don't have plural forms? I don't think these should really count.

I think it kind of depends on where you are. In England, collective nouns are treated as plural ("England have won the match"), but in the U.S. they are generally treated as singular ("The Thundering Herd has won the game"). From the standpoint of what makes sense, it makes sense that a collective noun depicting something of which there could be more than one (e.g. wolfpack, herd, etc.) should have a singular form to indicate one wolfpack or herd and a plural form to indicate multiple wolfpacks or herds.

That would be "Union".

The soccer teams get tricky with DC United and Sporting KC. Also, if we're talking about collective nicknames then Columbus Crew should be thrown in.

Montreal Impact is also another non-plural MLS nickname.
