Could be football, soccer, anything; What position do you enjoy/appreciate the most?
I'd go with NFL quarterback first. Nothing cooler than watching the elite guys play (Brady, Rodgers, Brees, Manning) IMO
Also, really enjoy and appreciate a true pg (Rondo, Nash, Paul).
Both of these control tempos of games, and must be good decision makers. The smarts and skill level are incredibly high in these spots as well.
What ya got, and why?

I like watching a shooter (ray Allen, Manu ginolbi, etc) run around picks and back screens trying to get open looks.

i say the battle between WR and CB which has an underrated effect on the rest of the field... with decoys, routes where guys rub off, and the effect a good passing attack has on the defense of a running game
everyone watches the ball but i love the iso cams on a Colston or Devery Henderson after a big play
also in soccer i like the wing midfielders...

Nothing like watching a QB on top of his game.

I like watching NBA shooting guards the most. Also wingers in soccer.
