Did closed cell in the walls and open in the attic on my current build. We shall see once it's ready to move in to.
My only advice with spray is make sure the unit is not oversized and possibly add a separate dehumidification system. That's what I did.

If you have spray foam, you need a 2 stage unit that runs at both temp and humidity points. When I built I installed 21 seer Carrier units. My downstairs unit has a 12x12 outside air return to pull in fresh air...

This too. You need a fresh air intake also. And yes a variable speed unit is preferable but not necessarily required. It was more cost effective for me to do a single speed and add a whole home dehumidifier that runs through the fan of the a/c unit.

Rockwool is a better option ober fiberglass and spray foam.

Just curious, why do you feel this way?
I've been pretty adverse to spray foam, but I finally found a good sub that I trust to make sure the application is done right. There are bad subs that can make spray a nightmare, that's for sure!
With spray the most important benefit it the air sealing IMO. Even if R values are comparable the absence of air leakage with foam makes it much more energy efficient.
