This looks like a Mexican standoff to me

The players LSU wants back from NFL mini camps are likely to get their injunction.
The SEC is not suing to overule that but the fact that LSU "recruited" them to file suit in the first place.
What it looks like to me is the SEC knows that the players will be allowed to play via court order, so they filed a lawsuit directly against LSU and Kiffin to create leverage in order to strong-arm them into not playing the players.
I don't know where the federal lawsuit goes because I don't know what proof they have that LSU "recruited" those players or if there is anything in writing barring LSU from doing so.
So if the SEC's federal lawsuit is strong then it's a Mexican standoff and LSU says we won't play the players and the SEC drops it's lawsuit.
If the SEC's federal lawsuit is weak, then the players will most likely play.
Somewhere in between, and if I'm LSU, I start negotiating. We'll play this guy but not that guy, etc.

Does the SEC have proof of our coach saying “just sue the league”

I don't know, and I don't also don't know if there's anything on the books saying you can't do that.
