In the Ole Miss game I think the defensive gameplan was TOO worried about Chambliss's running ability and played too passive, thus allowing Chambliss to torch LSU through the air. A little bit of an odd gameplan because even though Chambliss is mobile, he's a better passer than runner. This LSU secondary is good. They can matchup man for man. In the second half you saw the gameplan become a little more aggressive...and it worked. IMO, this Kentucky matchup is a far better matchup for that style of defense. Make the Kentucky QB and WRs prove they can beat the secondary man for man.
The offensive plan vs.Ole Miss in the first half was a bit odd too. Maybe it was more the result of Leavitt not making the right play (being took quick to not give the ball to the RB on a RPO, or ducking and running rather than allowing pass routes to develop), but it felt like LSU wanted to deliver big plays through the air rather than being balanced with the run game. Once they got to the run game at the end of the 1st half the whole complexion of the game changed.
Kentucky has been opportunistic. They haven't beaten themselves. But if you feel you have the more talented roster, then the approach is to really challenge the opponent to beat you more man on man. Scheme matters more when you are the less talented team. If you aren't, then simplify things and say "we don't really care if you know what might be coming because you don't have the horses to beat it"

We’re not losing to Kentucky why is everybody being weird about this game?
This. I don't get the concern. KY is a so-so (at best) team.
