At what point do we feel Confident the signees will come to campus and not sign? If they get out of the first round?

Turang was a first round pick
You can generally assume anyone taken in the top 10 rounds had a deal in place before being selected since teams lose money out of their pool for failing to sign those picks.
After the 10th round you can follow which team takes the flier, how much they spend on other picks, and piece together what kind of offer they can put together and whether there should be concern or not.

Just saw one of those graphs on Twitter with a list of four year college players who were drafted and signed between 2000 and 2020. I was shocked to see LSU was only 19th on the list.
