Anything is possible given enough money.

you could build a freaking dome over the entire stadium if you really wanted to.

Could you do it in a cost-effective manner? Probably not.

Eventually they will have to start all over, and that would be the prudent time to worry about a roof or air conditioning or modern bathrooms.

I cannot comment on the structural feasibility of adding a canopy.

However, I don't think it work with the aesthetics oft he intended Coliseum Style of stadium.

I think it is possible depending on how much money they are willing to spend, how much new structure they will allow, where new columns (if any) can be located, how much load can be added to existing, etc.

It's usually not a function of whether something is possible, but how reasonable the costs are and what architectural concessions have to be made.
